The second dessert I brought for the Teacher Appreciation "Beach Party" was "Beach" cupcakes. It's amazing how you can fit a whole story on the top of a little piece of cake! I started with two batches of cupcakes - one yellow and one chocolate. As you can see, the cupcakes, while tasty, looked like they had been through a hurricane!
Fortunately, it was not something that a thick layer of piped on cream cheese frosting couldn't cover!
To create the beach, my next step was to dip the cupcakes in a bowl of graham cracker crumbs.
Finally, I topped each cupcake with a drink umbrella.
A little gummie bear relaxes under the umbrella inside a gummie lifesaver "floatie".
How easy is that?
