Happy Cinco de Mayo!



It's Cinco de Mayo!  Unfortunately, between overlapping tennis practices and spring football, we just didn't have time for a fun family dinner.  Instead, Ella and I decided to meet Perry for lunch at one of our favorite Mexican hotspots - Tarahumata. (Yes, kids, the youngest child does have all the fun!)


Our favorite menu item is fresh guacamole.  Yum!!  It's made to order (no jalapenos, please!)  Paired with a bowl of homemade chicken tortilla soup, it's the perfect patio-relaxing lunch.



When I'm not eating out, I like to make fresh guacamole at home.  Here's my favorite version:

My Favorite Guacamole 

2 Haas Avacodos, diced
1 Tablespoon freshly squeezed orange juice
1/2 cup tomato, diced (flesh only)
1 clove garlic, minced
2 Tablespoons diced red onion
1/4 cup rough chopped, loosely packed cilantro
generous pinch of kosher or sea salt, to taste 

I think it's the surprise of orange that makes this recipe so good.  It's a little sweeter than your traditional lemon or lime.  You can adjust the quantities of any of the ingredients in this recipe to please your personal palate.

Mix together and enjoy!
